Cook linguine according to package directions. We suggest ITALIAN DONNE DEL GRANO ORGANIC LINGUINE MARE COLORED PASTA, 8.8OZ (which was used in our dish). Purchase it at www.gourmetimportshop.com for $7.10.
Kumpunny's Tip: Sprinkle salt in pasta water, drizzle olive oil (to prevent noodles from sticking); drop a spoon in the water (helps water boil faster), & put a lid on the pot (which also helps to boil faster). Remove the spoon with tongs before adding pasta.
Dry Halibut in paper towel to prevent fish from steaming. Heavily salt & pepper Halibut. Press into fish on both sides. Heat a heavy bottom frying pan to med-high; add olive oil. Once oil is ready, lay fish skin side down, away from you as oil will spatter. Turn heat to med. Cook till skin is crispy & golden. Turn fish once with fish turner. Cook till center is just opaque. Remove fish.
Kumpunny's Tip: Insert tip of a wooden chopstick into oil. If small bubbles appear, the oil is ready.
In the same pan that you cooked the fish, heat Kumpunny’s: Lemon, Sage, Parmesan & Cream Sauce on medium until warmed through. Using tongs, grab linguine & twirl onto a plate. Ladle the cream sauce on top of the pasta, enough so that it begins to pool underneath. Place Halibut on top and garnish with parsley. Take a bow.
Kumpunny's Tip: Don't worry if there's a little olive oil left in the pan as it will help bring a beautiful shine & flavor to the cream sauce.
